grilled veggies

i have a new obsession in the kitchen: grilled veggies.

we’ve had an electric grill (similar to this one) for years, but after a few ill-fated attempts to use it with meat and fish, we let it collect dust. then a couple of weeks ago i decided to try grilling vegetables with it, and they’re absolutely delicious! it’s very easy but makes a good impression and i like the fact that you can prepare them ahead of time and are actually better if you let them sit a night.

now it’s pumpkin season. the italian pumpkin really fascinates me, not only for it’s scrumptious taste and versatility, but also for it’s shape. isn’t it lovely? ok, get your pumpkin (or preferred veggie), clean it and slice it up. i prefer slices that aren’t too thin. you put them inside the grill for the amount of time indicated (in our case, 6 minutes).

when the time is up you take out the slices and put them in a dish with the desired condiment (preferably with fresh herbs). and you let it sit a bit and get nice’n’tasty. i seasoned this pumpkin with extra virgin olive oil, garlic, hot pepper, salt and minced marjoram and sage.

pumpkin’s good, but my favorite so far is cauliflower seasoned with extra virgin olive oil, garlic, hot pepper, salt and minced marjoram and terragon.

carrots are also good, here with extra virgin olive oil, garlic, hot pepper, salt and minced mint and chives.

onions are a bit odd-looking (they look like earthworms here, ugh!), but they’re absolutely delectable! i made these more simple, with just extra virgin olive oil, salt and balsamic vinegar. yummm! these veggies are scrumptious alone or accompanied with bread, rice, bulghur, cous cous… buon appetito!

  1. La zucca ha un bellissimo colore e fà bene ma è un po' troppo dolce per me…
    Ci faccio minestre, risotti, al limite la mangio indorata e fritta.
    Fai benissimo a cucinare le verdure cosi', meglio ancora sarebbe al vapore.
    Io sono pazza per le melanzane e i peperoni grigliati.
    Li hai mai provati ?

  2. anch'io preparo molte cose al vapore. non bollo quasi niente. mi piace anche fare un po' come gli orientali e passare le verdure brevemente in padella, lasciandole ancora parecchio croccante. e la zucca faccio spesso frullata con la pasta. prima aggiungevo anche i dadi di pancetta nel sugo di zucca, ma ora non mangio più la carne. indorata e fritta sarà buonissima! ancora non ho fatto io le melanzane ed i peperoni grigliati perché ho iniziato a grigliare dopo che non erano più di stagione, ma li ho mangiati, e mi piacciono un sacco! grazie per le idee! 🙂
